Butternut Squash Soup with Herbed Cream Recipe
A dollop of cool, tangy sour cream, seasoned with your favorite fresh herbs, adds a nice contrast to this sweet and mellow soup. Basil is a great option, but tarragon, chives, marjoram, mint or even cilantro will also work beautifully. If you don’t have an immersion blender, a blender can work to give the soup its velvety-smooth texture. Just make sure to vent the lid so that the hot soup won’t cause heat pressure to build up in the blender.
