Roasted red peppers flavor this easy baked fresh corn on the cob. The corn is wrapped in foil with butter and chopped roasted bell peppers.

Ingredients
  • 4 medium ears corn
  • melted butter
  • 1/4 cup chopped roasted red peppers

  • Prep Time: 0 minutes
  • Cook Time: 25 minutes


  • Total Time: 25 minutes


Preparation

Remove husks and silks from corn. Place each ear of corn on a piece of heavy duty aluminum foil, and drizzle with a little butter. Sprinkle 1 tablespoon chopped roasted red pepper on each ear of corn. Roll foil lengthwise around corn and twist ends.

Bake at 450° for 25 minutes.

Serves 4.
