There are so many sweet sweet potato recipes, I thought it might be nice to try a savory one for the kids. This recipe is basically like a deconstructed loaded baked potato, but with sweet potatoes instead. Roasting the sweet potatoes gives them a lovely caramelized crust. The best part is this dish is great any time of year, not just for Thanksgiving. Serve with chicken, fish, beef, pork or turkey.

Creamy Sweet Potatoes with Vanilla

Ingredients
  • 8 slices bacon
  • 1/2 cup ranch salad dressing
  • 1/2 cup shredded cheddar cheese
  • 1 Tbsp. chopped garlic
  • 3 pounds sweet potatoes, peeled and cut into 1/2-inch chunks
  • 1/2 cup chopped onions
  • kosher salt and freshly-ground black pepper, to taste

  • Prep Time: 10 minutes
  • Cook Time: 65 minutes


  • Total Time: 75 minutes
  • Yield: 6-8 servings


Preparation
  1. Preheat the oven to 350 degrees F.
  2. Fry the bacon until crisp. Drain on paper towels.
  3. Place the ranch salad dressing, cheddar cheese and garlic in a large mixing bowl and stir until well-combined. Add the sweet potatoes and onions, tossing to coat them well. Crumble the bacon over the sweet potato mixture, and stir to combine.
  4. Transfer the mixture to a 9 x 13 baking dish (compare prices).
  5. Cover, and bake 20 minutes. Uncover, and stir. Raise the oven temperature to 400 degrees. Bake, uncovered another 25 to 35 minutes, stirring halfway through, until the sweet potatoes are tender.
